Brighton and oysters go together like Champagne and, well, oysters. This city was built on fishing, and it's never quite let go of its love affair with a good shellfish platter. Whether you're a purist who takes yours naked with a squeeze of lemon, or you like a bit of drama (looking at you, Parmesan-baked and beef-fat-fried), Brighton's Lanes and seafront are stacked with places doing it properly. So pull up a stool, order more than you think you need, and let's get shucking.




Best Brighton Oyster Bars

1. English’s

Brighton's oldest seafood restaurant, English's has been serving up fresh catch in the city since 1945 and remains family-run to this day. Tucked into The Lanes, just moments from the beach, its oyster offering changes daily, so ask your server for the day's selection when you sit down. Expect them served raw on ice with classic mignonette, lemon and Tabasco, or with a punchier twist of ponzu, spring onion and wasabi sriracha, plus oyster shots served alongside a Bloody Mary or Negroni Sbagliato for something different. 

2. Riddle & Finns

Riddle & Finn's oysters come from Rossmore, sourced from Jersey and the Irish Coast, served simply with lemon and shallot vinaigrette alongside a range of hot and cold toppings. We think this restaurant really leans into a communal, old-fashioned New York oyster bar feel, with high fixed tables and bar stool seating rather than private booths, so it's best suited to walk-ins and a lively, shared-table atmosphere over a quiet meal. Pair your oysters with a glass of Champagne, naturally.

3. The Salt Room Brighton

This is a firm favourite of ours. Right on Brighton's seafront with uninterrupted views of the West Pier, The Salt Room reopened in 2026 after a full reimagining, and its seafood credentials remain as strong as ever. Freshly shucked oysters come in two varieties, Irish Rock and Louët-Feisser, priced from £4 for a single or £24 for six, with the option to top yours with a Bloody Caesar dressing or green apple, jalapeño and cucumber if you fancy something a bit more punchy. For the full experience, the Salt Room Seafood Tower (£70 for two) piles in oyster shooters, fresh oysters, chilled clams, tuna sashimi and more, best enjoyed on the terrace as the sun goes down over the water.

4. Pearly Cow Brighton

Pearly Cow's oyster offering is genuinely three-way rather than the usual single variety: choose from Whitstable, Lindisfarne or Jersey oysters, served with merlot vinegar, shallot and lemon, and ask your server for the oyster of the day if you want the freshest pick. At £5.50 each, £27 for half a dozen or £50 for a dozen, they're a strong way to start before moving on to the main event, cooked over an open Mibrasa grill. 

5. Burger & Lobster Brighton

Yes, we know, it's called Burger & Lobster, not Burger & Oyster, but don't let the name fool you. Tucked just off Market Street, they've quietly got a proper oyster hour going, Monday to Friday, 3-6pm, when rock oysters come at a special rate alongside Tabasco, fresh lemon and a shallot vinaigrette. Want something a bit more indulgent? Their baked oysters arrive smothered in garlic butter and golden breadcrumbs.

6. Stem

One we think is a must for your journey into Hove, Stem is a chef-led British bistro and wine bar from the team behind Dilsk. Its oyster offering stands apart from the usual lemon-and-Tabasco formula: Native Oysters (£4) come topped with a spicy virgin Bloody Mary granita, an icy, savoury twist that plays well against Stem's broader ethos of thoughtful, slightly unexpected British cooking. Pair it with something from their extensive natural wine list and settle in for the evening.
