A little less boasting, but heavily hosting one of the most wasteful generations, there's one new restaurant in Brighton that plans to counteract such an indifference to tasty trash. The first permanent zero-waste restaurant in the UK, Silo takes to North Laine for sensibly thought out plates and palate pleasers. From a £22,000 compost machine, to an intimate selection of but 6 dishes, all foraged and locally sourced, Silo are taking on a generation: plate first.

What we say:

It's intimate at only 50 seats, and thoughtful at only 6 dishes, what's not to like about the honourable sensibilities of Silo? What with Brighton being such a den of fresh food, utilising this market in a way that doesn't impeach on the o-zone layer can only be a strong draw for ethically minded diners in town. And while their opening hours leave those with after-work hankerings a little worse for wear, here's hoping for later dining hours and a larger selection of sensibly sourced tipples.
