Drawing inspiration from the likes of Yaxunah and Oaxaca, Kol is a brand new Mexican joint heading to the West End. The debut London restaurant from chef Santiago Lastra who worked at Noma's pop-up in his native Mexico, Kol centres on Latin American food made with British produce. 

Since a popular residency at Carousel in Marylebone, Lastra has been busy catching lobster in Baja California, exploring chocolate plantations in Tabasco and learning how to make traditional tortilla Yucatán in preparation for his much-anticipated venture. 

With a name lifted from the Spanish word 'col' which means cabbage, the restaurant aims to utilise ingredients which are often seen as low-end. Expect seasonal plates - from meaty tacos to seafood-laden tostadas - washed down with natural wines and mezcal (obvs).
