Scotland’s first female 5-star executive chef is heading up an all new restaurant in Glasgow’s Blythswood Square Hotel. Bo & Birdy is a part of the hotel's £1 million development project, and will include a 146-cover brasserie, described as a ‘relaxed yet casual’ dining space.

Executive head chef Gillian Matthews has worked for the hotel for almost 10 years and is taking the helm of the kitchen, creating a distinctive menu of seasonal Scottish produce with a modern twist on traditional dishes. Furthermore, the refurbished bar space will offer a section of classic cocktail and an extensive wine list of Californian and French favourites.

With regard to the interior, the red velvet features are being swapped for earth tones to mirror the Scottish countryside at the centre of the menu, creating a self-described ‘farm to fabulous’ feel.
