Deano Moncrieffe is opening his first agaveria in Dalston this spring. The tequila ambassador for Diageo has announced his new venture, Hacha, will serve an evolving menu of 25 tequilas, mezcals and agave-based creations, either individually or as part of a tasting flight. These will also be paired with a specific flavour enhancer, such as the sumptuous-sounding añejo tequila with grilled rum-soaked pineapple.
The bar’s signature drink will be a lip-smacking mirror margarita served from a fountain, and finished with citrus mist. There will also be reworked classics such as a tequila sunrise made with clarified orange juice, hibiscus and pomegranate, and the Batanga (tequila and cola), which will be served straight up like an espresso martini with a Guinness float.
Food-wise, Hacha will serve a selection of small sharing plates to graze on while sipping, such as a trio of ceviche and taster-sized cocktail sorbets to really give guests the essence of Mexico.
