Located at Brighton's landmark hotel, The Grand, Cyan is a bar and restaurant with a dogged commitment to highlighting the very best that Sussex has to offer. From its unique wall art created by local artists Weez & Merl, all the way down to the staff uniforms, every element of the venue has been sourced from right here on the South Coast. 

The dishes on offer, carefully curated by head chef Kirk, bring out the flavours of the local landscape as much as the international. A mix of small plates, larger dishes and sharing platters, you'll find everything from juicy steaks and lobster mac and cheese, to monkfish and lamb served together with baba ghanoush and tabbouleh. 

Over at the bar they've whipped up a drinks list to match, with a range of concoctions fronting ingredients as varied as smoked rosemary, spiced carrot puree and butterfly tea. They've also got a few classic whisky cocktails on offer, made using their very own house blend.
