Mr Lyan taps into Silo's zero-waste theme, opening a new bar in the famous Brighton restaurant

Silo restaurant on Upper Gardner Street is famous for its fresh dishes and zero-waste food policy.

The famous Ryan Chetiyawardana, known in the cocktail world as Mr Lyan, has teamed up with chef Douglas McMaster to open a new bar within Brighton's Silo restaurant. Opening in June, the newly refurbished bar promises to complement the dishes served by the kitchen and will offer diners a more comfortable seating area compared to the restaurant's strip-back, rustic decor.

The mastermind behind the well-known London cocktail bars White Lyan, DandeLyan and Super Lyan, Chetiyawardana has created a cocktail menu that follows the same zero-waste mantra of the restaurant; each cocktail is strictly made using only fresh fruits, fine spirits and recycled ingredients.

The line-up includes a sourdough sour, produced using the restaurant's own leftover bread, smoked barley and Bruichladdich whisky that has been aerated using seaweed, and a kombucha highball, composed of fermented tea and Blackdown gin.  

The new cocktail bar will open in June at Silo restaurant, 39 Upper Gardner Street, Brighton, BN1 4AN.
