Two Barrafina alumni have joined forces to create a solo venture in Soho. The brainchild of chef Nieves Barragan, Sabor is a Spanish restaurant that takes influences from around the whole country, from tapas through to seafood. Barragan will be heading up the kitchen, while ex-Barrafina-manager Jose Etura will be manning the floor. Opening on Heddon Street, Sabor (meaning flavour in Spanish) will be a two-storey venue that features a bar, communal dining and open kitchen.

Known for her Spanish-style dishes that pack a punch, Nieves Barragan is finally opening her own restaurant. Sabor will be opening in Autumn 2017 in a two-storey venue in central London. The ground floor will feature a bar that serves traditional drinks such as sherries and txakolis, as well as an open kitchen with a wood-fired oven, and space for around 30 diners. Upstairs will have more of a communal feel with a large table meant to be shared, and a menu influenced by Galicia and Catalonia. Dishes take inspiration from all over Spain with plates such as suckling pig and octopus cooked in olive oil and paprika.
