speak to the owners of Chiave, a cocktail bar in Redchurch Street
in Shoreditch where the energy made in crafting drinks is matched

Tell us who you are and what you do.
We are Selin and Cem, founders of Chiave. Originally from Istanbul, we moved to London three years ago, drawn by the city’s vibrant music and nightlife scene. London’s dynamic energy, its rich cultural landscape, and the endless opportunities for creativity were the perfect fit for our vision.
Alongside Chiave, we run a record label and event series called Fake Society, which celebrates underground music and brings together a community of artists and creatives.
At Chiave, Selin serves as the General Manager and Art Director, ensuring that every aspect of the bar, from the design to the guest experience, reflects our vision. Cem is the Event Manager and Resident DJ, curating events that bring the sounds we love to life, while also creating a space where people can connect over music, drinks, and good vibes.

Chiave is more than a cocktail bar, it’s an experience that combines the art of cocktail making with music and a welcoming atmosphere. When you step into Chiave, you’re immediately greeted with warmth, making it feel like a second home. Our signature cocktails are carefully crafted, each one inspired by a musical mode and named after songs that capture the mood of the drink. Whether you’re a cocktail connoisseur or someone simply looking to unwind, our bar staff is dedicated to ensuring you have the best possible experience, offering knowledgeable recommendations and personalized service. What would it have to be if you’re ordering just one drink at Chiave?
Street Spirit—for me (Cem), absolutely unbeatable. This cocktail is unique and daring. It’s a simple drink, but there's a complexity in its balance of flavours, much like Chiave itself. It also pays homage to our Turkish heritage, as it’s made with Rakı, a traditional Turkish spirit. For Selin, if I think of Chiave, it would be Limbo, our spicy margarita twist made with tequila and mezcal. It’s been a favourite since day one—bold and full of flavour, with just the right amount of heat. Personally, my (Selin’s) pick would be Killer Queen—our twist on the classic Bloody Mary. It’s so delicious and full of flavour, offering that perfect balance of savoury and spicy.
Your cocktail menu features some exciting twists on classics, such as the AllaTurca Espresso Martini, where did the inspiration come from for some of these drinks?
The inspiration behind our cocktail menu comes from a blend of tradition and innovation. Each drink on our menu is a signature creation.We also put our twist on classic cocktails. For example, the AllaTurca Espresso Martini is our unique take on the traditional Espresso Martini, but with a nod to Turkish flavours. We’ve infused the cocktail with rich Turkish coffee and paired it with Turkish delight as a garnish, combining familiar tastes with something new and exciting.
Our approach is to celebrate both classic cocktail culture and the unique culinary heritage of Turkey, mixing timeless traditions with modern techniques. This allows us to offer drinks that taste incredible and tell a story.
Our bartenders are passionate about their craft and always eager to get creative. They love experimenting with new ingredients, brainstorming ideas, and pushing the boundaries of flavour. This gives us the freedom to craft cocktails that are as much about the experience as they are about the taste. At Chiave, we believe in offering something truly special that surprises and delights our guests.

If you’re heading anywhere after a shift at Chiave, where are you going and why?
After a shift at Chiave, we’d head to 17 Little Portland Street, Fabric, or Fold, These spots attract a crowd of like-minded people who appreciate quality music, talented artists, and top-tier sound systems. Many of the artists we enjoy listening to perform at these venues, so it’s a great chance to catch live sets and continue the night with the same energy and creativity. Plus, since these places stay open late, it’s the perfect way to enjoy great music after a shift.
What does London’s cocktail scene have above other cities in the world?
London’s cocktail scene stands out for its incredible diversity and creativity, driven by the city’s mix of cultures and influences. This blend of backgrounds pushes mixologists and bartenders to constantly innovate and experiment with new ideas and concepts, resulting in a cocktail culture that is uniquely London.
