French born cuisine connoisseur Ollie has previously been Head Chef of The Grill at The Dorchester, Tom’s Kitchen in Chelsea and The Lawn Bistro in Wimbledon. An absolute star of the industry, his pop-up menu displays his French influence and extensive experience; offering earthy, seasonal flavours with luxurious twists.
Wine is matched with each meal, starting with persillade of king oyster mushroom, grilled focaccia, truffle mayonnaise and NV Crémant de Bourgogne Grande Cuvée, Veuve Ambal. After this, you have seared black bream, fennel purée, squid vinaigrette and Saint Véran, Domaine Paquet – Burgundy, France 2012. The main course is duck breast, honey roasted plums, creamed potatoes and port sauce with Barbera d’Alba Raimonda, Fontanafredda 2013. To finish, enjoy tarte fine of apples, caramel ice cream and Clos Dady, Sauternes 2011.
