From the team behind South Kensington's Ampersand Hotel, Mercer Roof Terrace is a brand new addition to London's rooftop bar scene. Nestled atop the Vintry & Mercer hotel which houses Vintry Kitchen and underground bar Do not Disturb, this sky-high bar boasts gorgeous views and a seasonal menu.

With floor-to-ceiling windows offering views of St Paul's Cathedral, as well as outdoor seating just in time for summer, this is looking like a prime spot for after-work drinks and dinner in the City. Inspired by the alchemy of plants and fruit, the cocktail list features infused spirits and cocktails, like the Twisted Daiquiri which steeps passion fruit, sage and ginger in Plantation Rum.

Pair your quirky drinks and skyline views with a food menu that showcases meat and fish from the British Isles. That means oysters, spiced beetroot cured trout and hay-smoked beef tartare alongside tomahawk steaks and turbot. There's even plant-based options, like hispi cabbage with wine and truffle.
