Dan Doherty, the Executive Chef at Duck & Waffle, has confirmed that he'll be opening his first solo restaurant in London later this year. Though the menus haven't been released yet, Doherty has dropped a few hints, namely that Sprout will focus on a 'green and fresh' concept, where each dish and drink has been made using the finest ingredients the venue can get its hands on. The restaurant will act as a calm cafe during the day but will transform itself at night to serve small plates that accompany the fine wine and cocktails served at the bar. To test the waters, the young chef will be serving his green recipes at a special pop-up restaurant at Harvey Nichols between 27th and 30th June. 

What we say:

Chef Doherty needs no introduction, having excelled and propelled himself to new heights with his work at Duck & Waffle. Now taking the big plunge for himself, he's confirmed that his kitchen will plate up dishes like green pea houmous with smoked yoghurt and grilled beef with dauphinoise chips. But we're most excited by how Doherty takes the 'green and fresh' concept and applies it to the rest of the venue. Apparently selling plant pots and ceramics that have all been created by local residents, we have a feeling the entire place going to have a breezy, carefree vibe running through it.
