Forget farm-to-table, because The Hoxton's latest offering is all about sea-to-table. Heading 14 floors up the Insta-worthy hotel brand's latest site in Southwark, Seabird promises Portuguese and Spanish flavours with a strong focus on seafood. Panoramic city views, Mediterranean tiles and floor-to-ceiling windows will provide the backdrop for hotel guests and visitors alike.

A joint venture with Joshua Boissy and Krystof Zizka of New York's Maison Premiere, Seabird will offer an extensive crudo menu alongside a dedicated raw bar and what's set to be London's longest oyster list. Whether you're dining inside or soaking up the alfresco terrace, tuck into dishes like Cornish plaice a la plancha, Basque-style bouillabaisse and an OTT plateau de fruits de mer.

With Maison Premiere's bar director William Elliott working his magic on the drinks list, it's looking like biodynamic wines and exotic cocktails not only on tap, but also pre-bottled and in frozen form. Think signature negronis and jungle birds galore.
