Description
Coming together for on Friday 21st and Saturday 22nd February, the evenings will see diners become judges to pick their winner for the night! Showcasing the unique styles that carried each chef to the finale of the popular cooking show, guests will cast two votes each, one to match the dish to the chef and one to signal their favourite.
The evening starts with canapés, with each chef preparing delicious morsels reflecting their varied culinary heritages. Delightful bites include chard teriyaki glazed mackerel fillet with carrot purée, pickled heritage carrot and puffed wild rice; okonomiyaki Korean pickle corndog with kimchi ketchup; and tartlet of confit duck with braised pumpkin, pickled apple, champagne gel and dill.
Next, it’s the main menu and competition is expected to be fierce with dishes including: Char sui pork jowl with hoisin sauce, Sichuan pepper scratchings and Chinese pancakes; steamed plaice with scallops, chive, a black mushroom mousse, burnt onion purée, pickled baby onions, sea herbs, crispy potato, wildflowers & onion oil; spiced aubergine steak with a barley salad, tamarind, peanuts & moutabal; and duck chhoila with smoked garlic chutney, gundruk powder & soya crumble – stay tuned for the full menu.
ABOUT THE CHEFS
Vivek Singh
With a global reputation as one of the masters of Indian fine dining, Vivek Singh’s signature culinary style marries modern Indian flavours with Western techniques. Executive Chef & CEO of four restaurants (The Cinnamon Club, Cinnamon Kitchen City, Cinnamon Kitchen Battersea, Cinnamon Bazaar Covent Garden and Cinnamon Bazaar Richmond), author of five cookbooks and a regular face on both television and live cookery events across the country, Vivek Singh is one of the most inspiring Indian chefs of his generation.
Santosh Shah
From humble beginnings on the streets of Nepal, to winning the nation’s hearts on Masterchef: The Professionals, chef Santosh Shah is putting Nepalese cuisine firmly on the map. Santosh shone a light on Nepalese cuisine in all its glory, introducing the judges to flavours and ingredients they had never experienced before. Having earned his stripes some of London’s most renowned Indian kitchens – including Benares and Dishoom – Santosh spent several years working at The Cinnamon Collection. He cites Vivek as his mentor, and in 2021, hosted a three-month sell out Modern Nepalese dining pop-up at Cinnamon Kitchen City.
Alex Webb
Winner of Masterchef: The Professionals 2020, Essex-born chef Alex won the show with his signature cuisine which fused his classical French training with his childhood food memories of living in Dunmow, Essex. Having previously held roles including The Frog, Roux at Parliament Square, Dinner by Heston Blumenthal and Helene Darroze at The Connaught. Since winning in 2020 Alex has had its own restaurant at the intercontinental hotel in park lane, and working with Disney. Alex currently has a residency at Joail, Maldives and a monthly pop up at De La Terre wine bar in Great Dunmow, and is also concentrating on private dining and is looking for the right opportunity to open a restaurant in 2025.
Philli Armitage-Mattin
An acclaimed chef with a passion for big flavours, Philli was the only female finalist on MasterChef: The Professionals 2020, which saw her entertain the nation with her playful take on Asian cuisine and her understanding of the chemistry of food. Philli recently wrote Taste Kitchen: Asia, a unique cookbook designed to help home cooks understand their palate and cook intuitively. The book groups Philli’s favourite recipes not by region but by flavour, and she is now turning her attention to how we can eat more sustainably, researching around UK food waste and ultra-processed foods.
Bart Van der Lee
With elegant plates of food showcasing technique, precision, and unique flavours, private chef Bart’s cooking is unique and daring. From the age of 19, Bart worked his way through the ranks in some of the world’s best kitchens including Noma, The Waterside Inn, Beluga, Toine Hermsen and Henk Savelberg, which between them hold nine Michelin stars. From picking blueberries in the forests of his native Doorn (The Netherlands) as a child to cooking on the banks of the river Nile, Bart finds inspiration from experience and strives to encapsulate the flavours and feelings of his travels in each of his dishes.
