French dining is about to team up with Scottish produce at Edinburgh’s newest all-day brasserie. Situated in the iconic Balmoral Hotel, the venue was created after a £3 million renovation and partnership with the Roux culinary dynasty (Alain Roux is behind this one). Spread across a restaurant and bar, they’re open for breakfast through till dinner, serving up an a la carte menu in the restaurant, sharing plates in the bar, as well as a raw bar offering up your choice of fresh seafood.

What we say:

Of course you’re likely to find a French menu at Brasserie Prince, but the dishes take inspiration from Scotland – so much so that all the produce is strictly Scottish. The sharing plates are a mouth-watering range of artisan cheese boards, charcuterie, and even Isle of Skye langoustines with cocktail sauce. The seasonal main menu, though, offers up selections like roasted rack of lamb with herb crush & white beans a la Portugaise, as well as soft polenta with mushrooms, courgette and pine kernels.
