Circo started out as Senor Buddha, but now it’s blossomed into one of Brighton's most innovative dining concepts.

A venture introduced to Preston Circus by head-chef Lee Shipley, the goal here is to create "good food that brings all walks of life together."

The restaurant whips up tapas-style plates fused with bold Asian influences. Expect to find a regularly changing menu packed with playful creations like the octopus tentacle cooked in red wine and Thai spices and the Asian tuna tartare & Iberian ham. Circo offers a wine list and craft spirits that are carefully tailored to the food on offer, and you can even finish with a scoop of Asian cocktail ice cream.
