Fan of the ol' flaming meats? Luckily for you, Sydney's brand new Ace Hotel in Surry Hills is opening Kiln, a stunning 18th-floor rooftop restaurant dedicated to wood-burning dishes. Home to one of Australia's first ceramic kilns, the hotel is paying homage to its history as a former brick factory with fabulous cooking methods and Insta-worthy interiors. Designer Fiona Lynch will feature local materials, such as stringybark eucalyptus, to complement the glass-walled dining room, along with two spacious terraces with fully retractable ceilings for starry night moments.

As for the food? The grub here is also going to be pretty lit, with a strong focus on umami flavours created by the fire, char, and smoke from the grill. Chef Mitch Orr has created an oh-so-fancy menu drawing inspiration from Italy, Japan and Southeast Asia. So, expect a great deal of sharing and protein-led options, with a load of tantalising aromas thanks to the soy, fish sauce and dashi. On the drinks front, they will also be serving a range of fresh local beer, wine and swanky cocktails.
