Sip, sip, hooray. Dan Berger, the former bar manager for The Ned and Gordon Ramsay's restaurant group, is opening a crackin' new cocktail spot. Blinker will be located on Spring Gardens, in Manchester's city centre, and promises to wow with its fabulous range of drinks and swoon-worthy interiors. Featuring up-cycled furniture and fittings made with sustainable materials, this watering hole is expected to be a hotspot for bellini sipping by day or martini quaffing by dusk.

This swanky haunt's name is inspired by the classic, yet often forgotten, cocktail made from peppery rye whiskey, grapefruit juice and a splash of raspberry syrup (cor, blimey), so expect to sip on a few of these. Along with a menu of traditional cocktails, the bar is driven by seasonality and will use British produce to create twists on four much-loved bevvies each month. So, who's getting the first round?
