Why not start with the Asparagus from the Wye Valley, produced by a small family business, accompanied by a clean and fresh wine from Austria, the Gruner Veltliner Heideboden 2019.
To follow, a medium-bodied red berry wine from Saumur in France, whose tasting notes include cassis and raspberry on the palette, accompanying well the selection of main dishes. Our suggestion would be the Seared Tuna, served with artichokes and courgettes on a Romesco Sauce – our modern light twist on a traditional Catalan sauce. with roasted tomatoes, red peppers and garlic, blended with a Merlot vinegar, which gives it a slightly sweet tang, topped off with roasted almonds.
To accompany the dessert our sommelier has chosen the Moscato d’Asti DOCG 2016 from Gianpiero Maronne in Italy, not the sweetest Moscato d’Asti and all the more delicious for it, finishing dry and crisp, with just the elegance of the bubbles. Perfect for the Lemon Posset with its lavender and lemon biscuit to dip in this creamy lemon dessert.
