The Rubens Masterclass Series: Create a plant-based menu at Borough Market
Meet Executive Chef Ben Kelliher at the hotel to learn how The Rubens at the Palace is reducing food waste in partnership with Winnow’s cutting-edge monitoring technology, and how they use surplus produce creatively in the kitchen. Chef Ben will also talk about the sustainable and responsible consumption of food, explaining how we work closely with the very best local and responsible suppliers. You will then visit Borough Market together, a historic market dating back to the 12th century with an emphasis on high-quality food and sustainable production.
The itinerary
You will first stop at Flor wine bar to discuss your personal requirements and preferences to create a plant-based seven-course menu with produce sourced at the market. Chef Ben will introduce you to Bread Ahead, where the bread is made right in the market, and Ted’s Veg to buy the ingredients for your starter. Ted’s Veg are proud participants in Planzhero’s plight to eradicate wastage, and the produce is chemical-free. You will meet the suppliers at Turnips, who are focused on providence and seasonality, to buy the ingredients for your main course, and Palace Culture to buy vegan cheese handcrafted in Crystal Palace, London.
You will then return to The Rubens at the Palace, where Chef Ben will personally create a seven-course meal to enjoy in our spectacular English Grill, including:
Canapés
Breads & crudites
Starter
Seasonal fruit sorbet
Main course
Dessert: flambé Rum Baba with Borough Market fruits
Vegan cheeses
