Joining the likes of Greenwood and Hai Cenato, Stoke House has opened in Nova Victoria. Created by chef Will Ricker, the restaurant serves a unique take on the carvery with meat sourced from British farmers, cooked on a wood-fire smoker and charged according to weight. Sides are equally as interesting with a salad wall for leaves and dishes such as pulled pork beans and garlic and thyme roasted potatoes.

Nova Victoria is already shaping up to be quite a hottie, with 17 new restaurants and bars, so it makes sense that the man behind Boda Negra and XO is adding to the collection. Stoke House is a modern bar and eatery serving up seriously delicious meat and sides; the slow-roasted Welsh pork belly with a side of smoked cauliflower cheese sounds pretty epic. The spot also caters to the after-work crowd with music and a bar that serves cocktails and wines straight from barrels.
