Aiming to create a dining spot in keeping with the Hilton’s high-end ambience, this 168-cover restaurant will open from 6am until late for dining at your convenience. Signature dishes will include Sirloin of Gloucestershire beef with sauce Bearnaise and New Haven hake with squid, mussel and shrimp stew, and the separate Distillery bar will concentrate on artisan gins, locally brewed craft beer and cocktails.

Given OXBO’s close proximity to the city’s famous Borough Market, it only seems right that so many of the ingredients should come locally sourced. Head chef Paul Bates boasts a wealth of high-end experience and with an open-plan kitchen adding a touch of theatre, Bankside looks set to add another fantastic restaurant and bar to its growing reputation.
