A new Hilton hotel has come to Bankside, and it's equipped with a typically luxurious restaurant and bar.
OXBO is the ground floor eatery serving high-end fare with ingredients from Borough Market. Head chef is Paul Bates - with stints at The Beaumont and Intercontinental Park Lane logged on his CV - and he is running a kitchen serving dishes like the Sirloin of Gloucestershire beef with sauce Bearnaise and New Haven Hake with squid, mussel and shrimp stew. A classy but relaxed eatery, specializing in British cuisine with a twist, open from 6am until late.

The OXBO Roast honours the finest traditions of the British Sunday roast with endless amounts of bubbles and innovative cuisine using supplies from specialist producers and world-renowned Borough Market. Fill you boots at the first of our two Trader’s Tables, dishing up a selection starters including peppered beef pastrami, potted crab and shrimp, lime chilli aji Tiger prawns and Iberico Chorizo from neighbouring Brindisa at Borough Market. For the main event, select one of our Roast options from Chef’s Open Kitchen before hitting the second of our Trader’s Table where you can make your way through a banquet of deserts including mini sherry trifles, Bakewell tarts, lemon meringue pies, chocolate profiteroles and a mountain of British cheese. |
