Fresh from the bustling streets of Chicago’s foodie scene where he heads up restaurant & Mexican cocina Birrieria Zaragoza, guest chef Jonathan Zaragoza has been leading the march to bring amazing Mexican food to stateside dinner tables, being named on Zagat’s “30 Under 30” industry list at the age of just 22 back in 2012.
Tommi first met Jonathan on a trip to the US a few years ago and she has since been dreaming of another opportunity to try his signature dish, slow-cooked goat birria - a traditional spicy Mexican stew from the state of Jalisco - which he has been perfecting since the tender age of 12 (under his father’s expert eye!).
When Jonathan reached out to let us know of his upcoming trip to London, Tommi decided this would be the perfect opportunity to bring some of his delicious Mexican & US influence to Wahaca’s Shoreditch Test Kitchen.
