Opening sometime in September, MNKY HSE is taking over Dover Street Wine Bar's old home. The venue will be spread over two floors and feature a bar and more relaxed drinking space upstairs, while the downstairs will be a restaurant. Using fresh British produce, head chef Pablo Peñalosa Nájera will create Latin American dishes and the cocktail menu will be heavy on the Mexican spirit mezcal.

Following on from the iconic Dover Street Wine Bar is no easy feat, but MNKY HSE seem up for the challenge. With a head chef who knows his stuff - Pablo Peñalosa Nájera was previously at the Four Seasons in Bogotá - the Latin American food looks set to be authentic and high quality. The venue promises to be a restaurant, bar and late-night space, and with so many elements in the mix it will be interesting to see how they pull off each, though with rumours of international DJs and mezcal-inspired cocktails, we don't think they should have too much trouble.
