Mesa Santa - our very special guest chef dining series - is back this month. This follows a sensational culinary journey last September with Chef Roberto Solis showing Londoners what Yucatecan cuisine is about, to celebrate our 5th anniversary celebration.

This time we are delighted to welcome Diego Hernández at Santo Remedio London Bridge for you to enjoy Baja Californian cuisine. A Tijuana born and raised chef with a special talent also as a DJ.  His restaurant Corazon de Tierra, in Ensenada, Baja California, has been named as one of Latin America’s 50 Best and is among Santo Remedio co-founder Edson’s favourite restaurants.
 
On Monday 27th February and Tuesday 28th February Diego will create a 5-course tasting menu with drinks pairings, including dishes like a black seabass ceviche, a swiss chard tamal with quail and turbot with green rice and seasonal mushrooms.
 
Diego Hernández is famed for his sustainably focussed restaurant Corazon de Tierra, in the breath-taking surroundings of the vineyards of the Valle de Guadalupe in Baja California, and is the setting for his modern take on traditional Mexican cuisine. Diego  Hernández has worked with some of Mexicos most celebrated chefs including Pujol’s Enrique Olvera and Manzanilla’s Benito Molina.
 
Drinks pairings will be in collaboration with some on Mexico’s most highly regarded spirits and will feature cocktails as well as sipping drinks

We opened Santo Remedio to share with Londoners how incredibly varied and exciting the flavours of Mexico can be. The food that we grew up eating at home, in markets, in taquerias, and at celebrations. Food is so unique and with such amazing depth of flavour that it has been declared an Intangible Cultural Heritage of Humanity by UNESCO. Santo Remedio is a popular Mexican expression meaning Holy Remedy. We chose this name because food is so central to our culture, that it is considered a remedy and comfort in almost any situation. We source specialty ingredients from Mexico, use traditional cooking techniques and serve our dishes alongside a selection of Tequila and Mezcal cocktails, Mexican beers, and wines.
