The Venue & The Story: On Saturday evening of the 25 February the aromas and flavours of the street food famously served in Bangkok’s Khao San Road will be available in a most unlikely location – a recording studio in Dalston. The culinary mastermind deliveng the authentic cuisine from her homeland to London is the Thai-born Chef Val. Her 5-course menu – which will remain a secret until the night of the event – is inspired by a recent trip back to Bangkok where she reacquainted herself with the Khao San Road, its surroundings and the wide-range of to-die-for street food available in its stalls. Yet, to enjoy these Thai delicacies in the comfort of, say, a fancy Notting Hill eatery wouldn’t give the diner the complete picture. Bangkok’s famous street food was forged in the utter chaos of the Khao San Road – backpackers, shops galore, tattoo and even massage parlours – which means that Chef Val required an equally crazy and provocative place in which to cook and serve her dishes in London. Some food pairs best with a glass of local Chang beer; Thai Street food goes beautifully while immersed in an intoxicating medley of voices, instruments and smells each trying to out-do the other.
Cue the Blue Studios, which is quite literally one of London’s leading recording studios for musicians and television commercials. It is filled with an energy as vibrant as that of Bankok’s famous street (if contained within a far smaller environment!), famous for musicians of all kinds rocking out on guitars and banging on drums, directors barking orders to their film crew working on their latest TV commercial, not to mention the buzz of waiters and the whistle of an espresso machine pumping out artisan coffees.
In the midst of this benevolent chaos will be Chef Val and her team fashioning the delectable street food from Khao San Road that will be given the unmistakable ‘kick up the back-side’ from a true London culinary professional. Chef Val’s 5-course secret menu is the result of her culinary passions having been reinvigorated through her recent visit back to Bangkok. When crafting her menu she recalled memories of her childhood during which people enjoyed delicious Thai food despite a complete lack of modern culinary amenities like refrigerators and cookers. When making her own pilgrimage to the Khao San Road, Chef Val was overcome by many a culinary memory, when she was young girl food shopping with her grandmother with the morning air filled with intense smells street food such as congee rice soup, coconut pancakes, satay, steamed dumplings and much more all cooking on wood burning stoves.
