The team behind the Michelin-starred Jamavar have created their latest venture around the people of the Mumbai railways. Inspired by the Dabbawalas, a team of men who courier meals from families to workers across the city, Bombay Bustle evokes the spirit of the city through its interiors as much as its food as different sections of the restaurant are designed to mimic a first-class railway carriage, the retiring rooms of a station and the art deco architecture seen around Mumbai.
