The new Four Seasons at Ten Trinity Square has revealed the details of its in-house Asian restaurant. Mei Ume, named after the cherry blossom, serves a combination of both Chinese and Japanese cuisine with large dishes such as Peking duck and braised pork belly with crab. The focal point, however, is the live sushi bar where you can watch chefs prepare the likes of spicy tuna with karashi and Parmesan along with BBQ Wagyu Beef and caramelised onions.

Some of London's best chefs jumped aboard the Four Seasons' Mei Ume; big names include Tony Truong (Royal China), sushi chef Mun Seok Choi (Sake No Hana) and Liang Kian Cheng (Yuautcha) who is on dim sum. The restaurant follows an Asian theme with silk screens and cherry blossom decorations, and has a private dining room along with a bar that serves sake, Japanese and Taiwanese whisky and cocktails inspired by Chinese astronomy.
