THE MENU & THE WINES
Fedellos de Couto, DO Ribeira Sacra
Fedellos loosely translates as "Brats", and Couto refers to the 12th century manor in Ribeira Sacra at the heart of the vineyards. It's a young project, started in 2013 by Luis Taboada and winemakers Curro Barreño and Jesús Olivares. The vineyards are farmed organically and worked by hand. The vines are planted on terraces along the steep slopes of the rivers Sil and Bibei, with a myriad of grape varieties, altitudes, and expositions. The wines are fermented with indigenous yeasts and whole bunches, at low temperatures to favour a gentle extraction of colour and phenolics. All the wines share an Atlantic freshness and a slatey minerality that make these wines unmistakably Galician.
Viña Somoza, DO Valdeorras
Valdeorras has a long tradition of grape growing stretching back to Roman times. Soils range from granite, gneiss, quartzite, and clay on the banks of the river Bibei, to slate and schist along the river Sil. The native Godello grape, which was almost wiped out by phylloxera, is now being replanted and produces well-structured, nervy whites with ageing potential. Viña Somoza was founded in 2001, but it was in 2017 when they employed Javier García from 4 Monos, that the project took an exciting new course. Javi has been brought in to maximise the potential of these outstanding vineyards, conversion to organics is well under way and a scheme to bring back to life historic vineyard sites is in the pipeline.
