Opened in May 2024 by South Wales-born chef Tom Waters, this modern Welsh spot has already made serious waves, earning its star just eight months after launch. The ethos at Gorse is simple: showcase the incredible produce Wales (and the UK) has to offer, paired with exacting technique and a relaxed, unpretentious vibe.

Expect a tasting menu that’s flavour-driven and seasonal, with dishes that celebrate simplicity and precision. Tom’s pedigree speaks for itself - he’s cooked at The Square, Bonhams, and even led the team at Heston Blumenthal’s The Fat Duck before returning home to create something truly special. At Gorse, every plate is about balance, texture, and taste, served in a space that feels warm and welcoming rather than stiff and formal.
