Owners Alun and Dawn Sperring built their name on regional Indian cooking rather than the standard curry house formula, and that focus hasn't shifted with the move. Order the Grand Thali if you're not sure where to start, a silver tray loaded with rotating curries, dal, chutneys and pickles that change with the seasons, or go straight for the signature Nepali hot wings, coated in fiery Szechuan peppers and crispy chilli sambhal.
It's loud, colourful and properly busy on weekends, with a cocktail list built around spice levels rather than an afterthought, so book ahead if you're coming on a Friday or Saturday, this is one of Brighton's most enduringly popular Indian restaurants for a reason.
