Join Chef Andrew Dargue and Donna Conroy, of the legendary vegetarian restaurant ‘Vanilla Black’ on their next venture - a day of cooking and learning.

In this session we shall be re-working 70’s classics; turning them upside down and creating stunning modern day vegan dishes with more than a hint of nostalgia.

Hosted in an 18th century fully 'off-grid' converted stone barn, set in the Mendip Hills, we’ll be cooking an unforgettable plant-based 4 course meal amongst the stunning Somerset countryside. 

Don’t expect a usual ‘cookery’ course; we’ll be treating vegetarian ingredients with the respect they deserve, in a quirky and creative approach that fans of the restaurant will know well. The day will provide a basis to inspire future dishes; you’ll take away a full understanding of the process, not just a step-by-step guide to the food we shall create on the course. This is a fully hands-on experience and the results will be truly delicious!

The course is suitable both for professional chefs, or those with an interest in molecular gastronomy who wish to learn the professional techniques Andrew has developed over his 16 years of running restaurants, as well as his previous life as a chef lecturer, specialising in plant-based cuisine.

What is the course about?

  • We provide an insight into the thinking behind Vanilla Black’s famous style of vegetarian & vegan cuisine. The focus is on dish construction; balancing flavours using unexpected ingredient combinations; cooking & knife skills.
  • We’ll cover 4 dishes – from inspiration and conception, through to plating up and service. However, our intention is that the skills you learn can be used as a basis for your future kitchen adventures – it is all about transferrable skills and a new way of thinking about your cookery.
  • The course is fully hands-on, plant-based cooking.

  • 10-15 mins drive from Shepton Mallet or Wells
  • 20 mins from Glastonbury, 35 mins from Bath
  • The 18th century stone barn is set within 20 acres in the Mendip Hills. On site accommodation is available via lapwingfarm.co.uk and is subject to availability
  • There are fantastic AirBnbs, hotels and guesthouses in the local area also
