Ynyshir Restaurant and Rooms is a bold, immersive dining destination tucked away in the wilds of rural Wales, near Machynlleth. Housed in a striking matt-black Georgian building, the space blends rustic charm with edgy modernity, like sheepskin throws, handmade Welsh ceramics, and a moody, music-filled atmosphere that feels more like a high-end house party than a traditional fine dining spot.

At the helm is chef-owner Gareth Ward, whose high-energy, no-compromise approach has earned Ynyshir two Michelin stars and a reputation as one of the UK’s most exciting culinary experiences. The menu is a surprise tasting journey of around 30 courses, heavily influenced by Japanese techniques and global flavours. It’s loud, it’s fun, and it’s unapologetically different.
