Project Halcyon is situated in the bottom floor of the historic Bonded Warehouse, underneath the cobbles of what once was the set of Coronation Street. Set to the backdrop of a 1920's speakeasy, Project Halcyon sets a tone of modern jazz-hop, cutting edge drinks techniques and welcoming service.
The team uses the on site distillery and lab to create exceptional seasonal ingredients to deliver their ever changing cocktail list, however everyone is catered for with rotating beer taps and a wine list that uses eclectic but approachable grape varietals.
Enquire about the use of Salon Vert, the on site absinthe parlor complete with traditional absinthe fountains and an extensive absinthe offering, or the still room where they offer distillation courses, cocktail masterclasses and exclusive tasting sessions.
