Stevie Parle has set his eyes on Soho for the site of this new Italian restaurant, Pastaio. Moving into a cosy space on Granton Street, the new restaurant will focus on serving fresh, hand-made pasta, all accompanied by traditional sauces. Parle will hope to create a casual-dining vibe inside this new Central London venue, refusing to take reservations and instead seating guests on communal tables. 

What we say:

It still baffles me that many of London's restaurants haven't figured out that fresh, local ingredients and simple recipes are often the best way forward. Chef Stevie Parle thankfully has and will be focusing on keeping things fresh and light at Pastaio. With five successful restaurants already under his belt - including Rotorino in Dalston and Craft in Greenwich - Parle's food will hit the mark. The real challenge, however, will be to maintain such a high level of authenticity and freshness as Pastaio gets busier and busier. Only time will tell, but our love of fresh pasta compels us to say his latest venture looks like it'll swim just fine.
