Singburi has long been one of London’s most cherished Thai institutions, evolving from its humble Leytonstone origins into a Shoreditch hotspot without losing the charm that made it a cult favourite. Founded by Tony and Thelma Kularbwong in 1999, the restaurant gained a reputation for authentic, fiery cooking, its iconic blackboard specials and a famously elusive booking system that only added to its mystique. Over the years it picked up accolades including Time Out’s Restaurant of the Year in 2021 and a place on the National Restaurant Awards list, celebrated for offering some of the most adventurous Thai dishes in the city.

Now in its new home, Singburi 2.0 is led by head chef Sirichai ‘Siri’ Kularbwong, who grew up cooking in the family restaurant and now stands at the helm with chefs Nick Molyviatis and Alexander Gkikas. The kitchen continues to champion bold, uncompromising flavours, from wild ginger chicken thighs to smoked pork belly and daily‑changing specials that show the team’s flair for balancing heat, sweetness and depth. It’s a more polished space these days, complete with an open kitchen, industrial‑chic design and a drinks list replacing the old BYO policy - but the spirit of Singburi remains firmly intact.

The result is a spot that feels both fresh and familiar: a grown‑up, Shoreditch‑ready reimagining that retains the fun, family‑run warmth of the original.
