At the heart of its next chapter is the appointment of Culinary Director Kostas Papathanasiou, whose résumé spans some of the world’s most revered kitchens, including The Fat Duck, The Ledbury and Restaurant Frantzén. His cooking is grounded in a deep respect for ingredients, technical rigour and a quietly confident, produce-led philosophy - one that aligns seamlessly with Lita’s identity while elevating it further.
Since stepping into the role in late 2025, Papathanasiou has been refining the menu with a light but assured touch. The restaurant’s signature focus remains unchanged - seasonal Mediterranean cooking anchored by a live-fire grill, but dishes now carry a heightened sense of clarity and intent. Flame-led techniques draw out depth and character from carefully sourced produce, whether in delicate seafood, robust cuts of meat or simply treated vegetables.
The menu is designed for sharing, moving fluidly from smaller plates and pastas to larger, centrepiece dishes. This quiet evolution has not gone unnoticed. In February 2026, Lita retained its Michelin star in the Michelin Guide Great Britain & Ireland, a recognition of the consistency and precision now defining the kitchen under Kostas’ leadership.
