Inspired by a decade spent running the legendary El Colmillo nightclub in Mexico City, founders Sam Hart and Crispin Somerville brought the electric energy of the capital to London Bridge. Named after the city’s most iconic street food, El Pastor is a vibrant celebration of Mexican fusion history. The restaurant pays homage to the Al Pastor tradition, a dish born from Lebanese shawarma influence and reimagined with marinated pork and grilled pineapple, served within the bustling, industrial-chic atmosphere of Borough Market.

The culinary heart of the restaurant is its in-house tortilleria, where heirloom Mexican corn is nixtamalized and pressed daily. Sourced through the TAMOA initiative to protect Mexico’s biodiversity, these tortillas provide the backbone for a sophisticated menu featuring 24-hour marinated pork shoulder, habanero-braised beef brisket, and inventive options like tenderstem broccoli tempura. Beyond the tacos, the kitchen turns out crisp tostadas and soft-shell crab, all designed to be paired with a researched list of mezcals, tequilas, and craft Mexican beers.
