The Gibson Bar is the brainchild of two of London's leading bartenders, Marian Beke (previously head bartender of Nightjar) and Rusty Červen (former senior mixologist at The Connaught Bar). Their aim? To re-popularise the eponymous cocktail in the capital city.
The Gibson is found on the former site of Il Cicchetto Bar. It's a cosy venue with a charming atmosphere, taking inspiration from the Edwardian era and shining a light on the classic Gibson cocktail in all its glory.
With no bars specialising in producing the perfect Gibson cocktail, Beke and Červen look to fill that gap in the market - producing this 20th century cocktail with the highest-quality spirits and offering a carefully curated list of pickles and charcuterie boards to complement the flavours. The Gibson experiments with different variations to provide punters with different variations of the Edwardian classic, in a dark, intimate and extravagant corner plot between Old Street and Clerkenwell.
