Darling is Charlotte Wilde's second solo project after co-founding fine wine bar Sager + Wilde. Taking over the former Shanghai restaurant site, the Dalston venue serves multiple purposes such as being a creative hub in the daytime and a drink-flowing wine bar at night. Wilde's talented team includes Tom Soden, owner of Nine Lives, and Dan Wilson, chef and owner of restaurant Dandy.

During the day, Darling will not be serving food or drink as it will have private hire rooms available for photoshoots and co-working spaces. But as soon as 5pm rolls around, the productive setting transforms into a relaxing bar experience. Not only will both traditional and natural wines be offered, but also ready-to-drink cocktails. The wine list of 100 selections rotates regularly and feature bottles from a variety of regions. An a la carte menu consisting of seasonal European dishes and bar snacks compliment the offerings. Most importantly, Wilde is dedicated to making her wine accessible and affordable for everyone whether they come from money or are a part of the working class.
