What they say:

With the 'zero-waste' mantra picking up speed across London, the famous team at Sweet&Chilli are looking to grab a slice of the action, creating Nine Lives in Bermondsey. The restaurant-bar uses recycled ingredients where ever it can when creating dishes and hand-craft cocktails. On top of that, the team make the most out of the fresh herbs and ingredients that they do use, redistilling lemon pith after they've been squeezed to extract all the remaining essential oils and create homemade hand soap and liqueurs.

What we say:

This 'zero-waste' concept has proven to be hugely popular over the last year and no features at the front of many chef's minds when they open new restaurants. Everything aspect of Nine Lives is part of a wider recycling process. The little waste the venue does create is sent straight to their compost pit, where it's broken down and used to grow fresh herbs and vegetables in the garden. The menus haven't been released yet, but we have a hunch they'll offer some of the most refreshing fare in the capital. This venue gets two green thumbs up from us.
