At its core, Saba is a Thai and Vietnamese culinary destination that balances traditional flavours with contemporary presentation. The menu, curated by founders Paul Cadden and the late Executive Chef Taweesak Trakoolwattana, spans rich curries, wok-fried classics, fragrant broths and well-executed noodle dishes, all rooted in authentic Southeast Asian techniques and ingredients. Many dishes feature herbs and produce sourced directly from Thailand alongside quality Irish ingredients, showing a thoughtful blend of global and local.
