Hitchman, formerly head chef at Casamia and trained at Ynyshir, brings serious culinary pedigree but applies it to a playful, ever‑changing menu of sharing dishes that defy easy categorisation. The food itself is a global mix filtered through Hitchman’s inventive style expect everything from homemade crisps with satay dips to tempura pollock, roast carrots with cavolo nero pesto or a rotating daily fish special. Plates are designed for sharing, generous in flavour if not always in size, which only adds to the lingering desire to try one more dish. Locally sourced ingredients shine throughout, and the concise wine and beer list champions independent producers, keeping things refreshingly unfussy.
