Perios began its journey in 2012 as an independent brand, inspired to bring the vibrant flavors of Tex-Mex cuisine to Birmingham. Tracing its roots back to the Texan-Mexican Railway and the legendary Hispanic Chili Queens, Tex-Mex food is steeped in rich history.

While it’s commonly known that Tex-Mex combines Mexican and Southern Texan influences, many might not know that its widespread popularity dates back to the 1870s. The Chili Queens, a group of enterprising Hispanic women, opened pop-up eateries throughout San Antonio, introducing authentic Mexican flavors to a wider American audience.

From our humble beginnings, Perios has grown, introducing dishes like burritos, fajitas, and nachos to its rich culinary culture. Over the years, we’ve also expanded our offerings to include a diverse selection of tequilas and cocktails inspired by Mexican traditions, enhancing the Perios dining experience.
