There’s a lot to love about this bar in Fitzroy - but it’s the drinks list that really has us head over heels.

With a focus on Australian-sourced bottles and produce, the menu is divided into spirits and their respective states - think gins from Victoria, whiskies from Queensland and everything in between. If you’re after more than a G&T, knowledgeable bartenders will knock Aussie spirits together for punchy cocktails - and even share their knowledge with tasting flights and monthly masterclasses.

All that excellent booze needs excellent food, which is where chef Michelle Boyle comes in with her homely mix of jaffles - we’ve got eyes on the Supremo, which features all the toppings from a Pizza Hut Supreme smushed into a jaffle. And if that’s not swayed you, the slick interiors will do the job, with sailors’ ropes hanging from the ceiling, black-and-white photos doubling up as wallpaper, and cosy little wooden tables.
