Masterchef judge and restaurateur Robin Gill is opening his biggest project yet, in the all-new neighbourhood of Nine Elms. Darby's will be located on the 10th floor of Embassy Garden's Towers, below London's first skypool.
The restaurant, named after Gill's father, will hark back to his Irish heritage, placing provenance at the heart. The menu will focus on live fire cooking and use ethically-sourced ingredients. Not only will an on-site bakery be churning out fresh bites, a brewery is set to offer guests a selection of homemade stout and vermouth.
The luxury complex built opposite the US embassy may have an opulent feel, but Gill has insisted that the restaurant will feel 'lived in' despite its surroundings. His previous success stories include Sorella, Counter Culture and The Dairy which now has its own cookbook.
