Silo

Description

We're the most wasteful generation in history, especially when it comes to the chow on our plate, but what if there were a dining destination in Brighton that fancies counteracting this?

Found in the heart of the North Laine on Gardner Road, Silo is the country's first permanently placed zero-waste restaurant. With it's charmingly simplistic interiors, upcycled furniture and rustic reelings, Silo's decor echoes the no-waste policy that its dishes insist upon as guests sit down upon wooden block stools and dine heartily on homegrown fair.

It's not just their locally sourced grub that infers Silo's ethics, boasting as little as just 5 different dishes a day, Silo not only cater for the meat eater and pescetarian alike, they keep their menu minimalistic yet hearty; even boasting a fine selection of fermented drinks such as Early Red Ale. From an in-house compost machine to their ethical policies, Silo looks to be counteracting wasteful culture, one pleasing plateful at a time.
